Corn/Tomato/Peach Relish

I have something like ten different varieties of heirloom tomatoes growing in the garden this year. As I bought the seeds in variety packs, I'm not even completely certain what I have (well, I know what the green ones are, and the Brandywines). That's OK-it makes for interesting salads/relishes.

Here's what I used, but feel free to adjust amounts and seasonings to your tastes.

5 assorted tomatoes, seeded and chopped
3 tablespoons chopped sweet onion
1 clove garlic, finely minced
1/2 cup parsley, chopped
2 large peaches, peeled and chopped
2 cups cooked corn
Olive oil
Balsamic vinegar
Salt/Pepper

Combine all and chill well before serving.
